Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated zucchini (unpeeled)
  • 1/2 cup semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  3. In another bowl, combine melted butter, sugar, eggs, and vanilla. Mix well until smooth.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in the grated zucchini and chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
