  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 onion, finely chopped
  • 1/2 bell pepper (red or yellow), thinly sliced
  • 1/2 zucchini, thinly sliced
  • 1 small tomato, diced
  • 1/4 cup spinach leaves
  • 1/4 cup shredded cheese (cheddar or mozzarella)

  5. Stir in the diced tomato and spinach leaves, cooking just until the spinach is wilted.
  6. Pour the egg mixture evenly over the sautéed vegetables in the skillet.
  7. Gently tilt the skillet to ensure the eggs cover the entire pan, then sprinkle cheese evenly over the top.
