Strawberry White Chocolate Chip Cookies

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup granulated sugar

  • 1 cup packed light brown sugar

  • 2 large eggs

  • 2 tsp pure vanilla extract

  • 3 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup freeze-dried strawberries, crushed

  • 1 1/2 cups white chocolate chips


Instructions

  1. Prepare the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  3. Add Wet Ingredients: Beat in the eggs one at a time, ensuring each is fully incorporated. Mix in the vanilla extract.

  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing just until combined.

  5. Add Mix-Ins: Gently fold in the crushed freeze-dried strawberries and white chocolate chips until evenly distributed.

  6. Shape the Dough: Scoop tablespoons of dough and roll into balls. Place them onto the prepared baking sheets, spacing them about 2 inches apart.

  7. Bake: Bake the cookies for 10-12 minutes, or until the edges are golden and the centers look slightly underbaked. Do not overbake.

  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
