Tropical Coconut Fish Delight

 


    Ingredients:

  • 600g white fish fillets (such as cod or snapper), cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1-2 red chilies, sliced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 400ml coconut milk
  • 200ml fish stock or water
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 200g cherry tomatoes, halved
  • 100g spinach leaves
  • Juice of 1 lime
  • Fresh cilantro, chopped, for garnish
  • Steamed rice, to serve



Directions:

  1. Heat the vegetable oil in a large pan over medium heat. Add the onion and cook for 3-4 minutes until softened.
  2. Add the garlic, ginger, and red chilies, cooking for another 2 minutes until fragrant.
  3. Stir in the turmeric, cumin, and coriander, and cook for 1 minute to release their flavors.
  4. Pour in the coconut milk and fish stock, stirring to combine. Bring to a simmer.
  5. Add the fish sauce and sugar, stirring until dissolved. Simmer gently for 5 minutes to allow the flavors to meld.
  6. Add the fish pieces to the pan and cook for 5-7 minutes until the fish is just cooked through.
  7. Stir in the cherry tomatoes and spinach, cooking for another 2-3 minutes until the spinach is wilted.
  8. Remove from heat and stir in the lime juice. Garnish with fresh cilantro and serve with steamed rice.
